Chicken Kebabs with Salsa

 One surefire way to make sure that your next tailgate party has a healthy, tasty option is to bring it yourself. Try this dish the next time you’re cheering on your favorite team:

 Chicken Kebabs with Salsa
 
¾ cup chopped, seeded tomato
¼ cup chopped avocado
2 Tbsp lime juice
1 Tbsp green onion, chopped
1 Tbsp cilantro, chopped
1 tsp chopped jalapeno
¼ tsp minced garlic
¾ pound skinless, boneless chicken breast halves, cut into 1 inch pieces
2 Tbsp lime juice
2 tsp low-sodium soy sauce
1 tsp minced garlic
 
 
1.   Combine first 7 ingredients. Cover and chill
2.   Put chicken in a shallow dish. Combine lime juice, soy sauce, and garlic. Pour mixture over chicken. Cover and refrigerate for 1 hour.
3.   Remove chicken from marinade, save marinade. Put marinade in a small saucepan and bring to a boil, remove from heat. Thread chicken onto 2 skewers.
4.   Grill skewers on rack coated with cooking spray. Grill for 6-8 minutes, turn occasionally and baste with reserved marinade.
5.   Spoon salsa on a plate and place kebabs over salsa.
 
 
Servings: 2 – 1 skewer and ½ cup salsa
